Milk chocolate: the quintessence of our chocolate factory
People wonder why there are so many famous chocolate makers in Switzerland. The answer is simple: it’s down to the quality of the milk from our cows. If, of course, this Swiss “white gold” is as carefully selected as it is by Villars. This is one of the reasons behind the success of our milk chocolates, but not the only one.
Milk chocolate is one of the world’s most enjoyed treats. But it’s not always of good quality. Since its beginnings in 1901, the Villars chocolate factory has only worked with exceptional produce and that high standard covers all of the ingredients.
We rigorously select the cocoa beans from high-quality terroirs from all over the world. Cocoa is, of course, the raw material for making chocolate products, but the quality of the milk used also has a huge impact.
When Villars chocolate was born in 1901 during the rise of industrialised chocolate production, its founder Wilhelm Kaiser opted for a crafted, artisan process. For him, it represented the guarantee of exceptional chocolate. And, naturally, he turned to the local milk producing area that was both high-quality and diversified. This quest for quality in all ingredients has ensured the long life of Maison Villars.
120 years later, we are continuing his legacy as we still work with Swiss producers keenly focused on the quality of their work.
Villars milk chocolate: a tribute to Swiss terroirs
We tend to forget the importance of milk in the flavour of chocolate.

As a tribute to our Swiss cows and their demanding farmers, we have developed three milk chocolate bars with the names of the areas the milk comes from, to introduce you to the different flavours:
- Pays de Vaud: a product with characteristic aromatic notes
- Bern: wonderfully milky and soft
- Fribourg: unctuous and creamy with a hint of caramel
Our milk comes from these farming areas...but not just any farm. It comes from a network of small family farms who spoil their cows as much as possible. The farming methods are traditional; the animals enjoy natural pastures with their fresh air and excellent grass. The herds are small with an average of 27 cows per farm.
Because a happy cow produces the best milk in the world. And that milk makes our best chocolates.
Cocoa + milk: the perfect equation!
Milk chocolate’s popularity comes from the wonderful marriage between the many flavours of cocoa, with a natural bitterness that can be discouraging, and the fullness and sweetness of milk.
Cocoa beans bring rich, complex and powerful aromas from notes of vanilla to summer berries, cinnamon to warm bread. Each terroir has its own specific features, its own characteristics. It is this diversity that leads to the original combinations proposed by our chocolate factory.
For a long time, cocoa was used with boiling water. The addition of milk made chocolate famous all over the world as it reduced a certain bitterness (especially at a time when the cocoa beans were barely processed) and, most importantly, added an extraordinary creamy and unctuous texture. There is a good reason why the inventor of milk chocolate was Swiss. He had this delicious Swiss milk close at hand!
And the creaminess and sweetness of the milk helped the chocolate makers reveal the flavour potential of the cocoa beans. The cocoa content may be lower, but the addition of milk and sugar reveals the subtleties of its excellent aromas.
Finally, this fabulous combination turns out to be the perfect base for patisserie and, above all, is ideal for adding varied ingredients to create a range of extraordinary recipes and flavours.
